I wish I could tell you this salad was born out of a new year new me mindset for the new year.
I mean i have been eating healthier and working out consistently for the last couple months leading up to new year, so it’s all good.
But all of this is more so inspired by a “oh crap I’m almost forty and can’t keep living my life like this” realization.
Where has the time gone???
At any rate. Baby cakes has been harassing me about trying a Mediterranean diet. Or at least more Mediterranean inspired meals. So that’s where this blackened salmon salad came from. Y’all can thank ya homie for this one.

The ingredient list for this blackened salmon salad is simple and easy.
- Blackened salmon
- Green leaf lettuce
- Cucumber
- Roma tomato
- Red onion
- Onion crisps

How To Make This Mediterranean Salmon Salad
You can cook your salmon several ways. I have been all about the instant pot lately. It has been delivering the most delicious hands off cooking, and I’m here for it. But I share how you can make your salmon in the oven, Nuwave Oven, and Instant Pot.
How To Make Blackened Salmon In The Instant Pot
I used salmon straight out of the freezer section of my local Harris Teeter frozen seafood section.
It was already blackened so I just added a lil old bay seasoning and put it in the instant pot. But if you are starting with an unseasoned piece of salmon, here’s a great seasoning to blacken it up a bit.
Put one cup of water in the bottom of the instant pot. Then close it and set it to the meat setting on high pressure, set for fifteen minutes.
I let it do a natural release for ten minutes and then opened and the salmon was ready. Just like that!
Like the instant pot, you can also cook meat (and fish) from frozen in the NuWave oven, another one of my favorite cooking gadgets.
How To Make Blackened Salmon In The Nuwave Oven
To make the salmon in the NuWave, the directions are very similar to the instant pot, except you don’t need water.
Instead you will place your salmon on the rack and cook for (insert time)
How To Make Blackened Salmon In The Oven
To make fish in the oven it will first need to be thawed throughout.
Preheat your oven to 350 degrees. Season and cook for roughly 17-25 minutes. Just until the fish is nice and flaky.
Preparing The Rest Of The Salad
Cut up your cucumbers and tomatoes in square like chunks. And set aside.
Slice avocados in half, open, and remove seed. Slice your avocado and remove from skin.
Arrange veggies and salmon on top of plate of lettuce, add onion crisps and this salad is ready!
I topped it with a Parmesan Cesar dressing and and it was nothing short of amazing.

Ingredients
- 2 salmon filets
- 1 medium cucumber, diced
- 2 small roma tomatoes, diced
- 2 avocados, diced
- ½ cup crispy onions, divided
- 1 head green leaf lettuce, chopped
- 4 Tbsp parmesan caesar dressing
Instructions
- Cook salmon according to preferred cooking method listed above.
- Chop veggies.
- Arrange all items on the both plates splitting between the two.
- Top with parmesan caesar dressing or dressing of your choice.
