Fall may be my new favorite season since living in the south.  The temperature is just right, not too cold, not too hot.  

But even more than that is pumpkin season!

Pumpkin recipes are the staples of the fall season and the real reason to love fall no matter where you live.

Because I love breakfast so much, and pumpkin almost as much, it only makes sense to work them together in any way that I can.

Pumpkin pancakes may be my favorite, but next to pancakes, waffles are my second breakfast best.

This homemade pumpkin waffle recipe is a perfect fall + breakfast + delicious recipe all in one.

Ingredients for Pumpkin Waffles

  • flour
  • baking powder
  • salt
  • eggs
  • sugar
  • pumpkin puree
  • cinnamon
  • ground nutmeg
  • ground cloves
  • butter
  • milk
  • vegetable oil
  • vanilla extract

How To Make Pumpkin Waffles From Scratch

I like to start by measuring and gathering all my ingredients.  If you have kids, depending on their ages, this is a great task to involve them and allow them to help.

Combine the flour, baking powder, salt, cinnamon, nutmeg, and cloves and whisk together in a mixing bowl.  Then set that aside.

Separate your egg yolks and whites, setting the whites aside.

Using a stand or handheld mixer, beat egg whites until stiff peaks form, adding in sugar towards the end.

Combine dry ingredients, pumpkin puree, egg yolks, butter, milk, oil, and extract in a separate bowl and stir together, making sure to not over-stir.

Fold in the whipped egg whites, until just incorporated.  I like to use a rubber spatula for this part.

Cook in your waffle iron according to the waffle iron instructions.  Different ones call for different measurements which can make the estimated number of servings vary.

Pro tip:  Heat your oven to 200 degrees and as the waffles cook put them directly on the rack to keep them warm and crunchy until finished and ready to serve.

These are amazing topped with blonde butter syrup or plain ole maple syrup.

Some additional delicious toppings to consider whipped cream, pecans or walnuts, or even white or milk chocolate chips, or chocolate or caramel drizzle.

What Goes With Homemade Pumpkin Waffles

While pumpkin waffles can stand on their own, a hearty breakfast is always a great way to start the day.

A side of cheese eggs and chicken sausage (especially apple chicken sausage) are never going to be a bad decision alongside pumpkin waffles.

  • 1 3/4 cups all-purpose flour
  • 2 teaspoon baking powder
  • ½ teaspoon salt
  • 3 large eggs, separated
  • 2 tablespoons sugar
  • 1 cup pumpkin puree
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 4 tablespoons butter, melted
  • 1 3/4 cups milk
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

    1. Using a stand or handheld mixer, beat egg whites until stiff peaks form, adding in sugar towards the end.
    2. Combine remaining ingredients in a separate bowl and stir together, making sure to not over-stir. Fold in the whipped egg whites, until just incorporated.
    3. Cook in a waffle iron according to waffle iron instructions.
    4. Top as desired, with whipped topping, pecans, syrup, etc.
