With all that said I could see how one would classify pumpkin as a “healthy-ish food. But if you want to know if that makes these cookies healthy, I have to ask is there really such a thing as healthy pumpkin cookies?
I mean when you add in sugar (no matter how small of an amount), butter (because every good cookie needs at least a little), AND chocolate chips??
Nah, I don't think these qualify as healthy pumpkin cookies. But they sure as heck qualify as delicious pumpkin cookies. And in my book that is all that really matters.

- brown sugar
- pumpkin puree
- pumpkin pie spice
- baking powder
- baking soda
- chocolate chips
How To Make Easy Monster Pumpkin Cookies with Chocolate Chips
Prepping the oven is always the best place to start when you are baking. Start by preheating the oven to 375 degrees.
Beat the butter with a handheld or stand mixer until creamy. If the butter is refrigerated or even frozen I always like to sit it out and let it get to room temperature.
Trying to soften it with the microwave is typically not the same. It always ends up unevenly softened or outright melted.
Add in the brown and granulated sugar. Mix until nicely mixed together and smooth as possible.
After combing the butter and sugar, add in the eggs, pumpkin puree, and vanilla, and mix again until ingredients are all well combined.
In a separate mixing bowl, mix flour, cinnamon, pumpkin pie spice, baking powder, baking soda, and salt together.
Slowly incorporate the dry mix into the wet ingredients continually mixing as you go.
Lastly, add in the chocolate chips and pecans.
Form dough into 2 inch balls and place on cookie sheet.
PRO TIP: Press the balls down (similar to how you make peanut butter cookies) to make flat cookies. Otherwise, they will be more of a puff cookie.
Bake cookies in the oven for 8-10 minutes, or until they are lightly browned.
Remove from oven and let cool for a few minutes on the baking sheet before putting them on a wire rack to cool.
