Single-serve individual lime no-bake cheesecakes in jars topped with raspberry are the perfect dessert for your next picnic, family camping trip, or as a delicious treat for at home. So quick and so easy.

Ingredients
 

  • ¾ cup graham crackers (crushed)
  • 8 oz cream cheese (softened)
  • 10 oz lime curd
  • 1 tbsp sugar
  • 3 tbsp butter
  • ½ lime (squeezed)
  • whipping cream (pre-made or home-made *see below)
  • ¾ cup raspberries (fresh or frozen thawed)

Instructions
 

  • Cheesecake Jars
  • Melt butter and combine with graham crumbs. Divide mixture in half and evenly disperse into the bottom of each canning jar.
  • Combine cream cheese, sugar and lime juice into the bowl. Mix well.
  • Using a spoon or decorating tool, layer the cream cheese mixture on top of the graham crumbs.
  • Next, spoon in lime curd.
  • Top with whipping cream layer, the rest of the graham crumbs and raspberries.
  • Serve immediately or store covered in refrigerator.
  • Homemade Whipped Cream
  • Whip 1 cup heavy whipping cream and 2 tbsp sugar until stiff peaks form.
  • Store extra covered in the refrigerator.
