Eggnog Drop Biscuits Recipe

These eggnog biscuits are made from scratch with only a few ingredients and under thirty minutes. In practically no time you get tasty, buttery, delicious biscuits perfect for Christmas breakfast or brunch.

Ingredients
 

  • 2 ½ cups all-purpose flour
  • ¼ cup sugar
  • 1 ¼ cup eggnog
  • 1 stick unsalted butter (melted)
  • 1 tsp salt
  • 2 tsp lemon juice
  • 1 tsp baking soda

Instructions
 

  • Preheat oven to 425 ℉.
  • Melt butter. This can be done by putting the butter in the baking dish and placing it in the heated oven. Or in the microwave and transfer to baking dish.
  • In a medium bowl whisk together lemon juice and baking soda.
  • Add flour, sugar, and salt.  
  • Follow with 1 cup of eggnog. 
  • Mix to form a sticky dough.  If it doesn’t mix well add in more eggnog a tablespoon at a time until the dough is nice and sticky, but firm. 
  • Using an ice cream scooper, scoop dough and place in the buttered baking dish next to each other, sides touching. Starting in the center and working way around.  Or you can use an individual brownie/biscuit pan to create perfectly shaped uniform biscuits.**
  • Bake in the oven for 10 minutes.
  • Remove from oven and brush tops with surrounding butter.
  • Place in oven and continue to bake for additional 7-10 minutes. Until tops are golden brown.
  • Remove and allow to cool for a few minutes.
  • Serve and enjoy!
