Ingredients
 

  • 1 pound of strawberries
  • 1 14 oz can full-fat coconut milk
  • 1/2 cup granulated sugar
  • 1 tbsp vanilla extract

Instructions
 

  • Wash and hull strawberries.
  • Place strawberries, coconut milk, sugar, and vanilla in a blender and puree until smooth and creamy, about 2 minutes.
  • Pour into loaf pan
  • Freeze for at least 5 hours (for a soft set) and 6+ hours for a hard set.
  • If frozen overnight, let sit at room temperature before trying to scoop out.

Notes

You can use honey or agave to sweeten instead of granulated sugar
