Ingredients
 

Chicken

  • 8 chicken tenders
  • 3-4 cups peanut oil
  • ½ cup buttermilk
  • 1/4 cup pickle juice (the secret ingredient)
  • 1 tbsp all purpose flour
  • 1 ½ tsp onion powder
  • 1 ½ tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp salt

Dredge

  • 1 cup AP flour
  • 1 tbsp powdered sugar
  • 1 tsp season salt or all purpose seasoning
  • ½ tsp salt
  • ½ tsp black or white pepper

Biscuits

  • 1 packet Sister Schubert’s Parker House Style Yeast Rolls (11oz, thawed)
  • 1.5 tbsp unsalted butter
  • 2.5 tbsp honey

Instructions
 

  • Preheat the oven to 400 degrees
  • Cut the chicken tenders into 3 equal pieces 
    8 chicken tenders
  • Add the tablespoon of flour onion powder, garlic powder, salt and black pepper to the chicken.
    1 tbsp all purpose flour, 1 ½ tsp onion powder, 1 ½ tsp garlic powder, 1 tsp black pepper, 1 tsp salt
  • Mix well.
  • Pour the buttermilk and pickle juice on top.
    ½ cup buttermilk, 8 chicken tenders
  • Mix until chicken is fully incorporated
  • Let marinate for at least 45 min up to overnight.
  • Heat the oil over medium high heat in a deep heavy bottom skillet or deep fryer.
    3-4 cups peanut oil
  • Place the tray of rolls into the oven and cook for 15 mins
  • Whisk all of the dredge ingredients together
  • Drop the nuggets individually into the dredge.  This prevents clumping.  
  • Coat well, then drop carefully into the oil.
  • When the 15 mins are up, spread tops of the rolls with melted honey butter mixture, return to the oven for 3-4 mins, remove baste once more and set aside.
  • Cook nuggets until golden brown. 
  • The rolls are precut, just add a nugget to them
  • Serve and Enjoy these tasty little sandwiches!
