Ingredients
 

  • 1 1/2 cup flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 3/4 cup sugar
  • 2 eggs
  • 2/3 cup vegetable oil
  • 2 ripe bananas
  • 1 tsp vanilla
  • 1 cup diced strawberries
  • 2 oz cream cheese (softened)
  • 1/2 tbsp butter (room temperature)
  • 1/2 cup powdered sugar
  • 1 tbsp milk

Instructions
 

  • In a medium bowl combine flour, baking powder, salt, and baking soda. Whisk until well combined.
  • In a separate bowl combine sugar, egss, vegetable oil, bananas, and vanilla.
  • Mash and mix until well combined.
  • Slowly combine wet ingredients to the dry ingredients and mix well.
  • Fold in strawberries.
  • Spoon into lined cupcake pan(s) fill 1/2 way.
  • Bake at 350 for about 20 minutes or until golden brown.
  • Make Glaze by combining cream cheese, butter, powdered sugar, and milk and mix.
  • Microwave about 30 seconds until pourable and drizzle over muffins.
