Brown the sausage in a large skillet. Remove the cooked sausage from skillet and set aside.
Using the grease from the sausage, brown the diced potatoes, peppers, and onions. Continue cooking until all the potatoes are cooked through.
Put sausage back into the skillet and stir until combined.
In a large mixing cup, whisk together milk and eggs. Pour egg mixture into skillet and cook over medium heat, stirring continuously.
When eggs are cooked, add in ½ cup of cheese and stir to combine. Remove skillet from heat and sprinkle remaining cheese over the top of the scramble.
Allow cheese to melt before serving.
