Shrimp + Zucchini Penne Pasta Recipe

A simple recipe that has to be classified as healthy comfort food. A combo of veggies, pasta + a light sauce, Shrimp Zucchini Penne is perfect in every way!

Ingredients
 

  • 1-16 oz package large shrimp
  • 2 zucchini (diced)
  • 1 package mushrooms (sliced)
  • 1 medium onion (sliced)
  • 4 cups penne pasta (dry)
  • 3 tbsp olive oil
  • 1/2 cup Kens Oil & Vinegar dressing
  • 1 tbsp garlic (minced)
  • 1 tsp Old Bay seasoning

Instructions
 

  • Dice veggies.
  • Bring a pot of water to a boil over high heat.
  • Cook pasta according to package instructions
  • Add 1 tbsp olive oil to saucepan and heat over medium heat.
  • Add in zucchini and saute, stirring often for roughly 4 minutes, until slightly soft but still crunchy.
  • Remove from skillet and set aside in a dish.
  • Add another tbsp of oil in skillet, heat, and add onions to skillet. Saute until slightly transparent.
  • Remove from skillet and set aside in the dish holding the zucchini.
  • Add another tbsp of oil in skillet, heat, and now add mushrooms to skillet. Saute until slightly soft. Remove from skillet and set aside in the dish holding the onions and zucchini.
  • Add in shrimp to skillet with garlic and Old Bay. Saute until completely heated through.
  • Once finished cooking, remove saucepan with shrimp from heat, add in veggies, cooked pasta, and Ken's dressing.
  • Toss and serve. Sprinkle with grated parmesan for added flavor.

Notes

I seasoned veggies with seasoning salt and garlic powder when cooking. Season according to taste.
