Ingredients
 

  • ½ cup vegetable oil
  • 1 ½ cups granulated sugar
  • 1 15-ounce can pumpkin puree
  • 2 large eggs (room temperature)
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon sea salt
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ½ teaspoon baking powder
  • 1 cup chopped pecans (divided)

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit.
  • Mix vegetable oil, sugar, pumpkin puree, eggs and vanilla in large bowl.
  • In a separate bowl, combine the dry ingredients: flour, baking soda, cinnamon, nutmeg, cloves, baking powder, and salt.
  • Mix the dry and wet ingredients.
  • Add in half of the chopped pecans and stir to combine.
  • Grease bread pan (6 cups/1.4 liters) and sprinkle in ½ of the chopped pecans into the pan. Pour the pumpkin bread batter over the chopped pecans in the pan.
  • Bake for 60-70 minutes or until a toothpick inserted into
    the center comes out clean.
