No Bake Granola Bars Recipe

A simple snack that doesn't require any baking. These No Bake granola bars will make you side eye store bought ones from here on out.

Ingredients
 

  • 1 1/2 cup oats (dry)
  • 1/3 cup flaxseed
  • 1/2 cup mini chocolate chips (semi sweet)
  • 1/3 cup cranberries (dried)
  • 1 cup peanut butter
  • 1/2 cup honey
  • 1/2 tsp sea salt

Instructions
 

  • Line a square baking dish (8x8 or 9x9) with parchment paper. Set aside.
  • In mixing bowl combine dry ingredients with exception of chocolate chips - oats, cranberries, flaxseed.
  • In a separate microwavable bowl, melt peanut butter in thirty-second increments. This minimizes the peanut butter overheating.
  • Mix together combined dry ingredients and peanut butter.
  • Check to make sure mixture is not too hot to avoid melting chocolate, and fold in chocolate chips.
  • Mold mixture into baking dish.
  • Refrigerate for at least an hour to let ingredients mold.
  • Remove from fridge and remove from the dish using excess paper.
  • On flat surface cut into bars or squares.
  • Enjoy!

Notes

Can be cut into 8 bars or 9 squares.
