Ingredients
 

  • 1 cup milk
  • 2 eggs (room temperature)
  • ½ cup melted butter
  • 1/4 cup lemon juice
  • 2 tablespoons lemon zest
  • ¾ cup granulated sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 tablespoons poppy seeds

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit.
  • Mix all ingredients for muffin batter in the order listed.
  • Scoop muffin batter into jumbo muffin tins or liners.
  • Bake for 20-22 minutes or until a toothpick inserted comes out
    clean.
