Eggnog Pancakes Recipe

Served with a cold glass of milk or a hot cup of coffee, and plenty of sweet maple syrup, the eggnog pancakes are perfect for Christmas morning, or any day you can find eggnog on the shelves.

Ingredients
 

  • 2 ¼ cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1.5 tablespoon baking powder
  • 1/4 teaspoon salt
  • ¼ teaspoon ground nutmeg
  • 3 eggs (separated)
  • 2 ¼ cups eggnog
  • 1 teaspoon vanilla
  • 4 tablespoons butter (melted)

Instructions
 

  • Melt butter. Set aside.
  • Separate egg yolks and whites. Add yolks to eggnog and set whites aside.
  • Mix together flour, sugar, baking powder, salt, nutmeg. 
  • Add yolks, eggnog, vanilla, and melted butter to dry ingredients. 
  • Once mixed well add in egg whites.  Do not over mix. 
  • Cook using a griddle or hot skillet. 
  • Serve warm and enjoy!
