Copycat Zuppa Toscana Recipe

This soup tastes like zuppa toscana soup from Olive Garden. The only difference is that it is made with turkey sausage instead of pork.

Ingredients
 

  • 1 tablespoon olive oil
  • 1 pound sweet Italian Turkey sausage (can use spicy if you prefer a little heat)
  • 4 cups red skin potatoes (diced)
  • 1 bag packed fresh spinach
  • 1 large onion (diced)
  • 1 tablespoon minced garlic
  • 28 oz can crushed tomatoes
  • 5 cups vegetable broth (can use chicken as alternate)
  • 1 cup half & half
  • 2 tablespoons basil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions
 

  • Boil potatoes for 15 minutes, or until just soft. Set aside.
  • Remove skin from sausage.
  • Heat a large pot over medium-high heat.
  • Add oil, garlic, and add diced onion. Saute until onions are soft.
  • Add sausage. Crumble Italian Sausage. Cook until sausage is no longer pink.
  • Stir in crushed tomatoes, potatoes, broth, basil, salt and pepper. Bring to a boil, reduce heat to low, and cover.
  • Let soup simmer for 20-30 minutes.
  • Add in half & half and spinach. Simmer for additional five minutes.
  • Enjoy!

Notes

Can serve with shredded parmesan on top.
