Copycat Olive Garden Chicken Gnocchi Inspired Soup Recipe

A not so average chicken soup that can be served as a side or meal. This copycat chicken gnocchi soup is better than chicken noodle anyday!

Ingredients
 

  • 1 pound boneless skinless chicken breasts (cooked and cut up)
  • 1 Tbs olive oil
  • 4 Tbs butter
  • 1/4 cup All Purpose Flour
  • 1 yellow onion (chopped)
  • 2 Tbsp minced garlic
  • 6 cups vegetable broth (can you use chicken if you prefer)
  • 2 cups milk
  • 1 cup carrots (cut up or shredded)
  • 2 tsp parsley flakes
  • salt (pepper, garlic powder for seasoning)
  • 16 ounce gnocchi (I use whole wheat)
  • 1 cup fresh spinach (chopped)
  • 2 Tbsp Cornstarch
  • 2 Tbsp water

Instructions
 

  • In large pot, combine butter and olive oil
  • Add onions, carrots and garlic
  • Cook until onions become translucent
  • Stir in your broth
  • Whisk in your flour and let cook for a minute
  • Simmer until it starts to thicken up
  • In a separate pot cook your gnocchi according to package directions, drain and set aside
  • Add milk to your veggie and broth mix
  • Bring to a boil, stir in seasonings
  • In small bowl, combine cornstarch and water until mixed
  • Add to your veggie and broth mix
  • Reduce heat, add your gnocchi, spinach and chicken
  • Simmer until heated through and thickened

Notes

The cornstarch mixture is added for thickness. If you prefer thinner soup, skip steps 10 and 11.
